Allergy Friendly Thanksgiving

We are having an allergy-friendly Thanksgiving dinner at our home tomorrow. It will be the first time I have cooked a holiday meal without using any eggs, dairy or soy. The girls really want a traditional meal this year and with Liam's food allergies I set off to find some recipes that I could fix and we could all enjoy. (All this instead of cleaning or unpacking from our move last week!) I will let you know if anything really fails the conversion test.

Here is the menu:
Roast Turkey
Green Beans with caramelized onions
Honey roasted sweet potatoes
Apple & cranberry mixed green salad
Homemade rolls
Pumpkin bars
(without the cream cheese frosting this year)
Pumpkin pie

I had to go to 3 grocery stores to find a turkey that did not have milk. Can you believe it?! Most of them had whey in the broth. Crazy! I found that ground flaxseed meal is a great substitute for eggs. Simply use 1 Tablespoon of flaxseed and soak in 3 Tablespoons of hot water for 15 minutes for each egg the recipe calls for. Evaporated goat's milk can be substituted for milk, heavy cream, half and half, evaporated milk or condensed milk. It is naturally creamier and sweeter than cow's milk so you really don't need to do anything special. Even Kroger carries it on the baking isle. Too Long

It has been too long since I have blogged! I feel so out of touch. I must confess that I don't have time to even write much right now, but wanted to let all of you know that we did close on the house, we have moved in and we are LOVING our new home and neighborhood. It is even better than I thought it would be :) We are still unpacking, although it has slowed down a lot mostly because I am sick of going through boxes and we have found almost everything we need. (I still can't find any of our brushes or my blow dryer.) We are using a doll brush for the time being because I keep forgetting to pick up more whenever we go to the store.

The kids put in their dinner order for Thanksgiving dinner tonight. You know, the one I wasn't planning on cooking this year. But they were so excited about it. I guess I will head to the grocery store tomorrow and go buy everything I wasn't planning on buying. Oh well, they don't understand how tired I am and if it makes them happy and I get a little turkey salad out of it I will do it! My favorite thing about leftover turkey is turkey salad sandwiches for days thanks to my GeeGee :)

I hope I will have some time this weekend to post some pictures and check in on everyone's blogs. But don't hold me to it, the greatest shopping weekend of the year is this weekend and I love a good deal and getting to shop by myself!

Still Waiting!!!

Okay, we are still waiting to close on our new house! I will try to give you the short version of the story. The man we are buying from is not very cooperative. He has delayed every single thing we have had to have done. He has not signed paperwork and is basically dragging his feet. We were set to close on our current house on Monday. Everything went fine. Then we were supposed to close on the new house this morning. Unfortunately he did not do the required repairs and did not sign any paperwork until last night. That means that we did not have an executed contract until about 9:30 last night and since today was a bank holiday no funding was available. Hopefully there won't be any more problems. I know we won't be living out of boxes too much longer, but I am SOOOOO ready to be settled in our new home. Will's dad flies in early tomorrow morning which is a huge blessing! The buyers of our home have been so lovely :) They are so flexible, understanding and sweet about everything. They are the complete opposite of the man we are buying from. Here are a few pictures I took the other night while at the house. There aren't many that came out well, one of the girls changed the setting on the camera and there were a lot of dark blurs in the rest :(

Off To Frisco!

Our bid was accepted, we are moving to Frisco! The funniest thing about this house that we are moving to is that the kitchen was just remodeled 3 weeks ago. And guess what, it looks almost exactly like the kitchen here. I couldn't believe it when we walked in. Same color counters, cabinets, and wall paint. The only difference is that the appliances are white instead of black. Crazy! We will be closing in 10 days. I have a lot of packing to do!!
